See ya, 2009

So when I sat down to write all the important events that happened in the past 12 months...I was completely overwhelmed with God's goodness. So many milestones and unforgettable memories happened that made 2009 such a great year.

I've never really been excited about New Years Eve & all that jazz...but now that I've reflected on how the Lord has blessed us in this past year, I'm pumped to see what He has for us next year.

So with that being are my highlights of 2009!
(in somewhat chronological order)

Here we go.

Honeymooning and Skydiving in New Zealand

Night Bike Ride across campus followed with wine & a backyard movie. Definitely one of my favorite nights of college.

RPTS/403 breaks. Chic-fil-a, Fitzwilly’s, Jason’s Deli, Frisbee at Anderson Park & Tree Climbing at Bryson Park with my favorites! Miss you all!

Going to Malaysia.

Turning 22. Not a big number, but spent with the best friends a girl could ask for…it was memorable nonetheless.

Spontaneously dunking my ring from a nalgene (and dumping most of it out).

Chase & I graduating from our beloved Texas A&M University on the same day & ceremony (praise the Lord)

Sadly, the only pictures I have of this are ones my mom printed for me. sorry! :)

Moving to Colorado knowing absolutely no one. Terrifying, but so good for this homebody.

Texas on my mind...

We had such a great Christmas! Ridiculously busy..but great.

The most unexpected part of Christmas was that Chase and I have been joking recently about how this (living in Colorado) is our chance for a white Christmas and we were giving that up to go home. (once again...joking). We get to Texas on Wednesday and it is literally HOT. 70 degrees and humid. We were seriously
sweating. Next day?


SNOW! in Texas! So, needless to say, we had a white Christmas, after all.

I'm missing Texas i made this little cutie this morning.

Favorite Things Friday

Hey Hey, Happy Friday! lets do this.

1. Elf. i was shocked when i saw "2003" on the movie poster. 2003? what? its been a christmas favorite for 6 years! that seems ridiculous. i've watched it twice already (doesn't quite hold a candle to sophomore year of college when i watched it every day in december...) and i love watching it while wrapping presents! gah, i love this movie.

2. Amy Butler Wrapping Paper! I bought my first (and probably last...this stuff is pricey!) roll last weekend and I can't wait to use it! Best of all, it's eco-friendly. well played, amy. well played.

3. My REI cabin fever pants: I got them last year from my in-laws for Christmas. I probably have worn them every day since it's gotten cold here. so comfy!! they even come in petite for people like me with short legs! hooray, REI!

4. Anna Maria Horner: oh, anna maria. your fabric is the best. the most creative. and the most fun to make stuff out of! crafting is a whole different game when i have a bag of your good folks or garden party collection. thank you. really. thank you. :)

5. Jason Castro's Let's Just Fall in Love Again: You can download it here. you can also tweet and download another song of his for free here! if i had a twitter account i would totally do this. Before it got too cold to run, i loved running to let's just fall in love again. such an upbeat, happy song! Jason is great. He's an Aggie (whoop). He was in AMC with Chase before his american idol days and apparently Chase made him sing a song to him outside his window. Oh, I will never understand AMC and their ways. Buy his stuff. great, thanks. (and congrats on the engagement!)

6. Lily Leighs has done it again! This time we traded on etsy. (so fun) I sent her little son an owl and she is sending me the necklace pictured above. Can't wait! (literally, can't wait. i had her send it to Texas so I wouldn't have to wait until we got back to get it)

7. SPRINKLES CUPCAKES! I forgot to go last time we were home. I will go this time and get! YUMMM. If nothing else, family...will you buy me the mixes at Williams Sonoma? awesome. thank you.

I was so pooped last night and so I thought, surely I could get a good nights rest.


Not really sure why... but I sure didn't sleep much last night. I woke up so tired, but was immediately reminded of psalm 90:14 (up at the top). Sleep is not going to satisfy us if we aren't letting His unfailing love satisfy us first. He will meet our needs...heck, sleepy mornings are what coffee is for. Need met.

I also didn't eat dinner last night. Just snacks from the Christmas naturally, I woke up super hungry. I decided to spoil myself and make a good I set the table and everything (so lame!)

I prepared for an omelette, but I forgot to spray the pan, so I ended up just making a scramble like at The W Cafe. yum.

i am slowly (s l o w l y...) becoming a morning person because of mornings like this! homemade caramel mochas don't hurt the process either :)

What to Eat Wednesday! - Sour Cream Chicken Enchiladas

huh? it's wednesday already? crap.

today has been one of the most productive days of my life. i'm only sort of exaggerating. i have made 15 coffee cuffs, 2 really cute aprons, 2 dozen cupcakes, cayenne pretzel sticks, a honey glazed ham, a peppermint latte (must.keep.going), i'm blogging currently, and i'm about to wrap presents and get this cute little townhome ready for our small group christmas party tonight! so pumped.

anywho, let's get to this recipe. one of my favorite memories from the whole wedding process was the kitchen shower that some sweet friends threw in my home town. at this shower, everyone brought a gift for the kitchen (ROBINS EGG BLUE!!!) and a recipe or two.

This particular one was given to me by my Aunt Mary (we share the same birthday and i love her lots! really, i have the greatest...and most beautiful...aunts around. try me). I bust it out when i am in desperate need of Tex-Mex. Good Mexican food is something Chase and I are pitifully deprived of here. (I know, cry me a river..) It is paired perfectly with black beans (with cilantro, garlic, and onion), tecate (for is yucky), and maybe a sopapilla cheesecake if Chase is lucky.

Sour Cream Chicken Enchiladas

1 lb cooked chicken breast
1 T cooking oil
1 can cream of chicken
16 oz sour cream
1 c. mayo (i use a bit less than this)
1/3 c. picante sauce
1 small can chopped green chiles
1/2 t. cumin (i add more because i LOVE cumin)
1/2 t. dried onion (**i skip this and just chop up a quarter or so of an onion**)
1/2 t. chili powder
1/2 t. garlic powder
one bag of monterrey jack, mozerella or cheddar cheese, plus some for topping
corn tortillas

-cook chicken in oil until done. i typically season mine with garlic salt.
-mix together other ingredients except tortillas.
-split cream sauce in half; add chicken to half, spread heaping spoonful into tortillas, roll up and place in baking dish
**its so much easier if you put a bit of crisco or oil in the pan first and heat the tortillas up. it keeps them from breaking**
-take remaining half of sauce and pour over enchiladas.
-top with grated cheese
-bake at 350 for 30!

Aunt Mary says: " I just layered the tortillas and sauce & cheese - like lasagna. Who has time to roll it up? "

haha love it. seriously, it says that on my recipe. too funny.

This usually makes 2 casserole dishes of enchiladas & they make great leftovers. just pop em in the microwave for 30-45 seconds. mmmm.

Oh, Christmas Tree...Oh, Christmas Tree

This past weekend, Chase & I went to Grand Junction for his company Christmas party. More about that later (maybe)...

Before the two and a half hour trek to GJ, we went with Matt & Ari to chop down our Christmas trees. hooray! here is our morning in photographs.

so back to the FCI Christmas party. hilarious. old people dancing like nobody's business. it was like a bad episode of the office. but don't let me fool you, i danced as well. although Chase came out there with me while i was dancing with a 55+ year old man to "SHOUT!" and two stepped with me a few songs (we showed those colorado folks how we do it at the Texas Hall of Fame), I was in need of my Kelley Belly Baxley & Jarratt Calvert to get my groove on with.

The highlight of the day was going to the cutest fabric store in the world on Main Street, Tangle. They have the best selection of Anna Maria Horner fabric you'll ever see. I can't find it anywhere around here! She is my all time favorite fabric designer and I told Chase when we were walked out ($35 later) "besides you and Jesus...not much makes me happier than a bag of new fabric"
