summer of pies: part three ((strawberry rhubarb))

I can only recall having strawberry rhubarb pie on a couple occasions. One was in Alaska on a family vacation. One was at a cute little cafe in Taylor Reservoir that Chase & I like to frequent for breakfast that takes up your caloric intake for the day. Both times were absolutely delicious and this was no exception!

For about a split second I got discouraged and thought "maybe I should just stick to cobblers since I can't make any of them look pretty and I end up just sloshing it onto a plate and smothering topping it with bluebell." But then I tasted it. YUM.

Here's the recipe, which I got from Williams-Sonoma ((thanks Moriah!))
2 rounds of pie crust
1 cup sugar
2 Tbsp cornstarch
2 Tbsp quick-cooking tapioca
pinch of salt
3 cups strawberries, hulled & quartered
3 cups rhubarb, trimmed & sliced 1/2 inch thick ((I used 4 stalks))
1 Tbsp cold butter, cut into small pieces

In a small bowl, stir together sugar, cornstarch, tapioca, and salt. Place strawberries & rhubarb in a large bowl, sprinkle with the sugar mixture and toss to distribute evenly. Immediately transfer to the pie plate with a crust in it. Dot with butter. 

Place other pie crust on top and decorate it with left over pie crust. Cut some slits in the top curst to allow steam to escape during baking. 

Refrigerate pie for about 20 minutes. Meanwhile, position a rack in the lower third of an oven and preheat to 350°. Bake pie until crust is golden, around 50 to 60 minutes. Transfer to wire rack & let cool completely to set.

  1. I've been meaning to make a strawberry rhubarb pie. I have enough rhubarb to give enough to half of the blogosphere for them to make a pie too. Yours looks delicious!

  3. I love strawberry rhubarb! Well, I pretty much love pie in general. It looks great for your first pie. :)
    I just made a mixed berry pie of strawberries, blueberries and blackberries. It was awesome. Up next I want to try to make an apple pie.
    I noticed it looked a runny in your pic. If you had a couple more teaspoons of cornstarch, your pies generally come out less runny.

  4. yess!!! such a wonderful combination & so perfect for the summer. and i say it doesn't need to look perfect, just as long as it tastes good :) i have never attempted a pie before, so i am always impressed when someone makes one from scratch!

  6. love rhubarb... unfortunately... there is hardly ANY of it in the south -- not even sure my husband knows what it is! my fam in NYC made the BEST rhubarb pies...

    add in strawberries. sounds fantastic!!
