handmade monday: ((recipe)) strawberry-coconut cake shooters


I had lofty great plans of a beautiful layered cake recipe for you today. However, sometimes I'm incredibly impatient. This plays out really well when waiting for a cake to cool...and by well I mean tragically. 

When my cake kept falling apart as I tried to cut it into squares to layer, I was on the verge of shouting four letter words tears. I sat there for a few minutes, frustrated that I had already spent the afternoon baking something that was going to be tossed out. I didn't have any melting chocolate or sticks, so cake pops were out of the question. 

And then there were cake shooters.


Ingredients:
one box of strawberry cake mix
3 eggs
vegetable oil
water
1/4 cup of flour
quarter cup of strawberry puree
2 teaspoons of coconut extract
shredded coconut 
1 recipe or tub of frosting of choice
sprinkles
food coloring

Directions:
Mix ingredients as directed on box, plus add 1/4 cup of flour. I added the strawberry puree for a little more color and natural flavoring. It's totally optional. Add the coconut extract, as well.

Bake cake as instructed on box. Crumble cake into bowl when cooled. Mix coloring into frosting, as well as a teaspoon or so of coconut extract. Spoon the cake into mini cake cups and top with frosting. Top with sprinkles or shredded coconut. Easy peasy!

I even busted Mr. Owl the Salt Shaker trying to steal one. 





Now, that's my kind of shot ;) ((am i right????)) 

SO...next time you ruin a cake, or it sinks, or you don't have the patience time for it to cool...make some fun cake shooters! They'd be cute served with those little wooden spoons, don't you think?
