cheese plate tips

Mmmm. Cheese. The sole reason I could never be vegan or do the paleo diet for an extended period of time. Did you know there are seasonal cheeses? I had no idea until Whole Foods put me on assignment to create a spring cheese plate. I chose a manchego and a DELICIOUS maple smoked cheddar ((that my be the best cheese I've ever tasted, even though I'm a gouda lover)). 

Manchego is subtly sweet and slightly nutty and is paired well with a pinot grigio or cider. It goes great with charcuterie ((fancy word for a miscellaneous deli meats such as proscuitto or salami)) - but I love to put some fresh basil on top, drizzle it with olive oil and finish it off with some freshly cracked pepper served on a cracker. One of my favorite things I've learned from my mother in law in the kitchen!

The cheddar was just so flavorful and delicious that I had to just serve it with crackers - no more, no less. Serve it alongside a brown ale or even make it into a hot grilled ham & cheese sandwich. YUM. 

What are your favorite "fancy cheese" options that you put out for snacking when you have guests over? What do you serve them with? Another favorite combination of mine is thinly sliced provolone rolled up with genoa salami.

Here are some tips for creating a cheese board:
1. Pick 2-3 cheeses of contrasting textures and flavors: creamy, firm, sweet, pungent. If you're feeling fancy, make chalkboard labels or maybe you have one of those chalkboard cheese boards! Otherwise, if you're not trying to impress anyone, you can just leave the label/packaging next to the cheese.
2. Two ounces of cheese per person is a good rule of thumb, hostesses!
3. Let sit at room temperature for 30 minutes before serving for optimal flavor.

outfit schmoutfit ((crushing on florals + spring))

It took long enough, but the trees started blooming and the grass turned green this week. Spring is HERE! Can we talk about how some trees smell like fruit loops and some smell like...well...trash? It's baffling...but anywho, my street is truly a sight to see with all of the pink and white trees, tulips blooming, and daffodils showing off. I'm in love and I don't care who knows it.

Easter Service at Boulder Theater

outfit schmoutfit ((a classic))

I seriously love a good peplum. Sometimes, I feel like I'm too dressed up in a  few of my peplum tops and that my outfit looks too fussy when I wear it, so I styled this one down with distressed denim and some booties. The embroidery on the blouse keeps me from wanting to throw on a  colorful statement necklace, so I kept it simple with this pine cone necklace that Chase gave me for Christmas. I just felt so put together in this outfit all day...classic and simple. My kind of outfit.

Anatomy of an Easter Basket

For the Kroger Easter Basket Hop, I created an adorable Easter basket for my little man. 

Something I didn't anticipate getting excited about as a mom, was making an Easter basket. Knox definitely doesn't know anything about Easter - he probably will have no clue as to why we are shoving a giant cake in his face for his birthday this weekend. However, I remember getting so excited about Easter baskets as a little kid, so I wanted to get the party started early on. I didn't do anything involving rabbits, or Easter bunnies rather, but went with a carrot theme ((which I am fully aware that rabbits eat carrots)). Eventually, we will explain to Knox that Easter is about Jesus, our Savior, raising from the dead and saving us from our sins - but for now when all he can say is da da, ma ma, and ah dun (all done) - we will just watch him enjoy some treats. 

Here's the breakdown of a fun Easter basket for a baby boy. We went with his favorite things - colorful toys, food pouches with lots of carrot action, a teething toy since homebody is teething like a mad man at the moment, and some baby mum mums. We also added some candy for mom and dad (reese's pieces for dad and jelly beans for mom). My favorite thing in the basket is the cute little carrot easter eggs! No "easter basket grass" because little man would try to eat it. 

All of this was purchased at King Soopers ((or your local City Market, Tom Thumb, or Kroger chain)) for around $25. You can find all sorts of great Easter basket ideas on their DIY Easter board on Pinterest ((I want to try the DIY washi tape eggs!)). 

What do you put in your kiddos' Easter baskets? I remember it always being a jackpot if I got a kite! :)

swimsuit season is upon us

Whether we like it or not, swimsuit season is just around the corner. I got some time at the pool last week on our vacay near Phoenix and just wore my suit from last year. Since I got back, I've been searching for the perfect suit and I found the pineapple one - it had to be mine. I rounded up some other fun ones to hopefully make your job a little easier.

2. I snagged this little pineapple number and can't wait to get it! I'm loving the "midkini" top paired with the higher waisted bottom. More than anything, I can't wait for the snow to melt and the heat to get on over to Colorado so I can wear it.
3.  I bought this suit bottomlast year from Urban Outfitters in a stripe. The bottoms are comfortable and what can I say, I'm a mix and matcher so it was perfect! I wore it with my go-to bandeau top  from target.
4. Sorry, another peplum, but I couldn't help myself. This cute little peplum polka dot tankini is from Lime Ricki. I find their suits are a little juvenile most of the time, but this one is perfectly sophisticated in my book. I think Audrey Hepburn would have worn this :)
5. How fabulous is this rash guard from Albion Fit? It's perfect for catching some waves or for some beach volleyball. 
I forgot to put this suit in the collage. I LOVE it. 

Also: here are some swimsuit shopping tips. 
((any fellas reading? shoo. get outta here))
1. Eat well and work out for a week - you'll be less bloated and a bit more toned. I know this sounds vain, but it will make swimsuit shopping a bit less horrifying. Who knows, it might even motivate you to work out more before swimsuit season is in full swing!
2. Get a wax before you try on. Trust me.
3. If you can get free shipping deals - order a ton in different sizes online and try them on in the comfort of your own home. This also keeps misleading mirrors from fooling you.
4. Make sure you aren't showing too much cleavage or muffin top. Inspect thoroughly ;) Last year, I was most self conscious about my midsection, where in years past it's been my thighs, so I bought a high waisted retro suit bottom and it worked wonders for my confidence at the pool. If you're busty but have a tiny waist, wear one of those suits that look like crop tops  (and have a longer ruffle on the top portion) like this one from splendid. They're super flattering and protect you from any under boob. There are SO many great options out there for every body type, there's no reason to look like you squeezed into your suit. Plus, only you know what size you bought, so get what fits you NOW and what looks good NOW, not what you think you might fit into in a month.
