((recipe)) EASY Pumpkin Waffles



It's officially the season of all things pumpkin and I have to admit, I'd rather drink THIS or THIS than everyone's beloved PSL, but I can definitely get on board with some pumpkin treats. Every Autumn we make several batches of pumpkin muffins by mixing spice cake mix with a can of pumpkin. They're super easy and delicious, so  I thought I would try the same method with pancakes or waffles. 



I used Birch Benders six grain cinnamon pancake & waffle mix that you can purchase at Whole Foods and a can of 100% pure pumpkin puree. 

Step 1:
Heat up the waffle iron while you're mixing your ingredients. Spray iron to make sure the waffles don't stick.

Step 2: 
Mix 2 cups of the waffle mix with 1 cup of pumpkin puree. Add a tablespoon of oil and then one tablespoon of water at a time until the mix is moist, but not too wet. (I usually add 2-3 TBSP of water)

Step 3: 
Add about a half cup of the mixture and add more if the waffles are too small when they come out. Every waffle iron is different, so adjust accordingly. 

Step 4:
Top with butter and maple syrup and GO. TO. TOWN.

  1. Oh my goodness! This is totally something I was searching for. I wanted to make some for our next Church Leadership meeting. I love me some PSLs but have you tried the toasted graham latte? That's really good!
